Tara
(Cheese Pâté)

When you have at least three kinds of leftover cheese which has become a bit hard, cut it into a small dice. Spread out an equal weight of ricotta on a pastry board, season well with pepper, add a cupful of oil and the leftover, diced cheese and mix well using your hands. Leave in a closed container for at least three or days at room temperature.
